Gather your ingredients, you'll need:
- 1 cup fresh basil leaves
- 1 cup fresh spinach
- 3 gloves of garlic (chopped)
- 1/4 cup pine nuts
- 1/2 cup extra virgin olive oil
- 1/2 cup grated Parmesan cheese
- 1 teaspoon of salt
- 1 cup fresh spinach

Throw the spinach, garlic, basil and pine nuts into a food processor and pulse until chopped.
Gradually add the olive oil while still processing until smooth.
Transfer to a bowl and stir in the Parmesan cheese. Season with salt and black pepper.
And all done!
So I wanted to give my pesto a try, not just as a dip but an actual dish. I ended up doing a delicious crab sandwich! For that you will need:
- Your freshly made (or bought) Pesto
- Chopped imitation crab meat
- Cream cheese
- Cojack Cheese (cheddar could also be delicious)
- Bread, obviously (it can be white or wheat, whatever you want)
Mix in a bowl the crab, cream cheese and a few spoonfuls of pesto.
Layer the bread with Cojack and place it on a skillet over medium - low heat until the cheese melts (or the bread begins burning). Later add the crab-pesto-cream cheese mixture and enjoy!
I've always wanted to try to make my own. You made it look easy.
